Default recipes?

I just finished dinner - some steamed rice and pan fried fish, and I got to thinking about default recipes --- you know, those ones that just sort of happen when you need to cook dinner and don't have a specific plan?

Tonight, I made default fish -- take fillets of any kind of fish, sprinkle thoroughly with salt and pepper, and pan fry in some olive oil, then serve with a lemon wedge. Any fish that comes into this house not attached to a specific menu plan or recipe has a roughly 85% chance of ending up served as default fish.

So what are your default recipes and foods?

  1. Veggies in the fridge, doused heavily with garlic salt, then grilled and chopped. Put veggies in pan w/ shiratakis (if I've got 'em), Bragg's, balsamic vinegar, lemon juice, and let flavors meld. Add in some sort of protein... egg whites, rotisserie chicken or tofu.

    Default shellfish (generally scallops or shrimp) includes pan-searing in butter and olive oil mix, then deglazing w/ a bit of lemon juice, adding salt, pepper, tarragon, and a little half and half or cream or evap milk.

    1. Chicken breasts -- or boneless thighs or fish filets --- sauted in olive oil with artichoke hearts, maybe some chopped fresh tomatoes if they're in season, capers, lemon juice or white wine tossed on top to finish.
