I just received a beautiful tagine as a gift. It's Crate and Barrel's own brand and has a nice deep dish. It's glazed ceramic and I'm wondering if I dare use it on the stovetop, which is how tagines are supposed to be cooked. Does anyone have one of these? Advice?

Judging from the description on the C&B website, its not range safe. They specify (a few times) that its for oven use only. It sure is a gorgeous piece, though. I expect it'd do very nicely in the oven once you got things started in a different pan on the stove and transferred it. Not as versatile as some other tagines out there...but also about 1/5th the price from what I can see.

thanks ccbweb. I took a look at the C&B site when I received the gift. But I also asked the person who gave it to me (who is experienced with tagines) who told me to season it by filling it halfway with water and putting it in the oven for an hour. She claims that I can then use it on the range. I'm afaid to take that chance.

I recently got an Emile Henry tagine and it had specific instructions about preparing it for stovetop use (you're supposed to scald milk in it first). Since yours doesn't have those instructions, and the website does say 'oven safe' several times, it doesn't seem like you should use it on the stovetop.

This is less in regard to the C+B tagine and more about the Emile Henry tagine. How have your experiences been with this piece so far? I have a 12.5" one on order.

Thanks!

I have the small one (is that 12.5"?) and the one meal I cooked in it was a bit tight. If we were more than a family of 2 I would want the bigger one.

My parents honeymooned in Morocco so all through my childhood they cooked in the tagine they bought there. I remember them roasting whole chickens, you definitely couldn't do that with this one.

The biggest one I could find online was an authentic one from tagines.com and it was only 14". It would have to be a fairly small chicken. Perhaps I just need to go to Morocco to get it.

I believe I have the 14" tagine of which you speak. It is much larger than you would think until you see it. The cone is too tall to go in the oven without removing the top rack. I'm sure a whole chicken would fit in it.
