        <content>Love to have a supply in the fridge and would like to know how long I can safely keep them.  Usually they're gone in a week but just wondering what you think.  Thanks.</content>

      <content>If you submerge them in olive oil, they will keep several weeks or more.  I also freeze a good portion of the red peppers I harvest and roast in the fall.  Freeze them in "snack" size Ziplocs.  The texture holds up remarkably well.</content>

      <content>You have potential for botulism storing peppers in oil.  If you store in oil you should only keep them for 10-14 days in the fridge.

You can keep them in acidified liquid.</content>
