Venetian wine cake recipe?
Looking for a recipe for a bundt cake made with wine (marsala?) and olive oil and rosemary - may also have dried fruit and/or almonds. I'd be enormously grateful for any leads. Grazie!
I recall a cake similar to your description, which I have been trying to locate; however, in my surfing travels I did come across a website that asks if you are trying to locate a lost Italian recipe. Yes!! I think I may have mistakenly posted a vague inquiry about the same thing, thinking it was a Tuscan thing, inside a thread about uses for olive oil. The cake is topped with big sugar granules, right? The crumb is very flakey and tender and moist. I've had it, but I've never seen a recipe, and I would very much like to have it as well. It's a wonderful, grown up treat with afternoon coffee.
Years and years ago (like maybe somewhere in the range of 1994-96) there was a recipe for this in the New York Times. I think... Does anyone know how far back the online archives go for subscribers?
So! The recipe I have does not have wine, marsala or other. My recipe is quite similar to Batali's recipe from the Babbo cookbook, but I used a bundt pan instead of a loaf pan.
