Easy dinner for 4

My husband and I are having another couple over for dinner on Wednesday and I need to make something easy that I can put together after work. Any ideas? I was thinking possibly steaks with a salad and ______? Plus an easy dessert I can make tonight and serve tomorrow? Thank you!

    Roast potatoes (both, white and sweet), fennel and garlic, S&P.
    Make biscotti tonight and serve with ice cream.
    A coffee cake made tonight would be fine tomorrow night.
    So would a chocolate mousse cake.

      Roasted cauliflower or a mix of potatoes/sweet potatoes?
      Orzo and sauteed spinach?

      The easiest dessert uses Nabisco Famous Wafers (those thin chocolate wafers) and sweetened whipped cream. There's a recipe on the box to make a log "cake" but you can make individual ones just by stacking the wafers with a layer of cream between them. They sit overnight so the wafers absorb some of the moisture and get soft and cakey. You can serve them with fresh berries for some color.

        Twice baked potatoes. You can make them ahead of time and pop them in the oven when ready to cook.

        Easy dessert: brownies made tonight, served with ice cream. I'm a sucker for a brownie sundae.

          a flan is my favorite thing to do in this circumstance. People love it so much and you can do it ahead. also scalloped potatoes are completely connected in my head with steak and salad.
