Old mushrooms

I made some mushroom barley soup with week old mushrooms. They were a bit slimey so I just wiped them off. The soup tastes great. There's no danger in using old mushrooms is there?

  1. Not unless they smell or you can see other mold forms growing. Its really obvious when they've gone to far...... Its a whole other life form

    1. Speaking of old mushrooms, is it better to store mushrooms in the fridge or in the air like onions or garlic?

        I find better in the fridge BUT not stored in plastic a dry paper bag is best. Really about 40 - 45 dgrees would be great but room temp is too much

          Store in a glass jar in the fridge. They will last for weeks.

            Is the jar open or with a top? If with a top, tight or loose? With the paper bag they are breathing, which keeps them fresh.

              With a closed lid. I use large mason jars. The jar keeps the mushrooms from drying out. On the second day they slightly brown, but they stay firm and fresh for weeks.

            Now that I've recently begun transferring them from the store package to paper bag and keeping in the vegetable bin in the fridge, they last much, much longer than before and stay nice and dry.

              I take my cues from the way mushrooms are sold here in the self-proclaimed "Mushroom Capital of the World", Kennett Square, PA. In the markets where they are sold packaged, they're covered with plastic wrap on the top, but the cardboard boxes that hold them have air vents. I think m'rooms need to "breathe." When I buy them packaged like that, that's how I leave them until I'm ready to use them. And don't clean them until you're ready to use them, either. I've found, too, that when I buy them loose and keep them in those plastic produce bags, they're quick to turn dark brown, the gills open up faster, and they become "slimey." And I do believe they need to be kept refrigerated.

            2. Only buy as many as you can use in a couple days. Different varieties behave differently.

              1. If you find yourself with "too many" mushrooms, try stringing them on a threaded needle and hang the string in the kitchen. Cut off as many as you need to plop into soups, stews, pot roasts, etc.('Too many' mushrooms; is that as much an oxymoron as 'too much' asparagus?)
