What to do with a homemade cookie crust

I need to make a dessert for Monday and I have a great crust of homemade cookies. It's in a 9x13 and it's parbaked. Ideas?

    a layer of pastry cream, then fruit w/ apricot jam brushed on top

      Wow, sounds perfect for my ice cream pie. I usually just use a graham cracker crust from the grocery store. Anyway, I take two pints of Haagen Dagz, one vanilla and one coffee, let them soften a little and thoroughly mix them together. I either leave it plain or add in ground up Snickers or Reeses cups and fill the pie shell. I then sprinkle the top with more Snickers or Reeses.

        or port glazed grapes as here:

        Otherwise, a chilled cheesecake (which I personally prefer over baked-it's lighter).

          I would make a sweet potato pie on top of that! The flavor combination with that crust would be spectacular.

            I agree, or pumpkin. Or pecan pie, heavy on the pecans light on the filling. Or pecans, caramel and chocolate chips.

            Actually, I should have posted in the first place that it's a pecan brown sugar shortbread crust. hmmm..

              That would still go wti hthe idea I posted above, I think.

              If it's a sugar cookie crust or somethign pretty neutral, make a lemon curd and spread it on the bottom ater the crust is fully baked. Then arrange blueberries, kiwi, strawberries, watever you want on top. Then boil some water with some seedless jam until quite sticky and brush over the fruit. Delicious!!
