Grilled Red Snapper Recipe?
Two years ago, one memorable beachside meal was fresh grilled red snapper done on a giant grill served with guacamole and fresh rice. I remember it was seasoned simply with limes and something called achiote seasoning? Can anyone help recreate this yummy dish?
There are no recipes. No one can re-create the magic of the beach, the perfection of the coals, the freshness of the snapper, the company, and the state of your mind at the time. Achiote (annato) is just red coloring from Bixa arellana--but combine it with the same coals and a nice incised snapper plus the lime juice, salt, pepper, and chili--and you should be good to go.
