Pulled Pork Leftovers

I have a lot of leftover pulled pork. Do you have any suggestions on how to use it up...besides more sandwiches?

          I usually use our leftovers as a topping on baked potatoes. I like the quesadilla and taco suggestions too.

            I use leftover pulled pork in a variety of dishes, many of them already mentioned here (quesadillas, tacos, hash). I also use left over rice or some noodles to make a quick fried rice or lomein.

                Pulled Pork Spring Rolls - Wrap some pork (add some kind of bbq sauce if it isn't already sauced) with a little cheddar in either wonton or egg roll wrappers, fry... serve with dipping sauce 1/2 buttermilk, 1/2 mayo, chili powder, cayenne, garlic powder, s&p, anything else that you like.

                  Pork hash (like corned beef hash) or PP tacos.

                  For the PP tacos -- refry the PP (similar to carnitas) like hash in a hot skillet or griddle. It will brown up nicely and get crispy and even carmelize a bit. Guac and some decent salsa and you're there.

                    Cheater posole. Take about 1.5 lbs of pulled pork, a big can of hominy, and a big can of either red chile sauce or enchilada sauce. Combine in a big pot, add water to cover, and bring to a boil. Simmer for about 30 minutes, and serve with chopped onion, cilantro, radishes, and warm tortillas.

                    Or pulled pork spaghetti. Add your favorite BBQ sauce (home brew or commercial) to the pulled pork and toss with spaghetti noodles (or any pasta, for that matter).

                    I've even made pulled pork ice cream. A little odd, but better than you'd think!

                      A Stromboli works for me. Or Chinese bbq pork buns. Green chili would be fine with shredded pork.
