When I was in Sarlot, France (the fois gras capital of the world), I purchased a small tin for a gift. It wasn't cheap... Turns out the person doesn't like fois gras. Would anyone know how long it might stay good? I'm embarrassed to say how long I already have it.

Have you checked for a date on the can? In my experience, French products almost always stamp a best-before date.

When I went to Paris, I bought my dad several cans of fois gras. To my suprise, I found a few left in the fridge a year later! He said he was saving it for special occasions. I believe he ate them at some point and, well, he's still alive.

At least a couple of years. I have held them even longer than that and they have been fine. The vendors in Sarlat may tell you to keep the cans in the frig. I've got a glass jar of fois gras entier from Sarlat in my frig right now!
