Anyone know of any good restaurants, preferably downtown or on the subway line, that emphasize fresh, not overly stewed, vegetables and whole grains on their menu, while keeping the flavour up? I'm not necessarily looking for vegetarian restaurants, but ones that might have meat in its dishes as only a minor ingredient. I like meat, just not a big chunk of it at every meal. Inexpensive restaurants preferred.

Mr.GreenJeans on the top floor of the Eaton Centre near Sears. It offers a casual dining experience with burgers and chips at about $8. I wasn't feeling for meat that day so I ordered a vegetarian burger which had a portobello mushroom and grilled veggies in it.

If you get off at Yonge & Bloor, you can walk a few minutes North to Yorkville, and go to Mela. It's an Italian Vegetarian cafe, small with a few seats, and a great menu of veggies and whole grains. My favourite is the stuffed pepper (usually stuffed with quinoa or brown rice), and the soups and sandwiches are fantastic as well.
