Great Easy Cream Cheese Frosting

I just discovered a really great easy, and good, cream cheese frosting (not that regular cream cheese frosting is all that hard, but......)

I made these fabulous Carrot Cake cookies from Epicurious, which I've made many times before.

But instead of their recipe I had used a coupon for a FREE tub of Philly's new Cheesecake filling, and it had been sitting in my fridge for a week or so.

I used that instead, and I realized it would make a great frosting for carrot cake or cup cakes or almost anything that you'd use a cream cheese frosting.

It's not toooo sweet. It really works well.

  1. How much "frosting" did you have in the tub of cheesecake filling? Do you think you could add a cup of powder sugar to extend it a little? Would that be a bit much?

    1. It'a a BIG tub... and I think adding powdered sugar would not work. You could easily frost a layer cake with leftover.

      This isn't frosting... it's cheesecake. It's just like cheesecake. The consistancy is the same as the Philadelphia whipped creamcheese in the small tubs.
