ISO: Banana Bread Recipe

Sara's World Famous Banana Bread from Hawaii has slices of bananas and pieces of grapefruit in it. Any one have a recipe like that. All I see are mashed bananas and no other fruit. Thanks.

  1. I found a banana bread recipe that I liked and here is what I did:
    for the mashed bananas 1 cup mashed and 1 cup sliced.
    For the grapefruit peeled one and diced the segments. Worked out fine.

      What kind of texture does diced grapefruit have? And is it still super-sour or does the sugar in the cake actually soak into it? This sounds interesting...



      - 2 Cups, All Purpose Flour
      - 10 Tbsp. Sugar
      - ¾ Tsp. Baking Soda
      - ½ Tsp. Salt
      - ½ Cup (Heaping), Semi Sweet Chocolate Chips
      - 3 Over Ripe Bananas, well mashed
      - ¼ Cup, plain yogurt
      - 2 Large Eggs, beaten
      - 6 Tbsp. Butter, melted and cooled
      - 1 Tsp. Vanilla Extract


      Grease and flour a 9 x 5 inch baking pan. In a large bowl, mix the flour, sugar, baking soda, salt and chocolate chips together. In a second bowl, mix bananas, yogurt, eggs, butter and vanilla. Fold the wet ingredients into the dry with a rubber spatula, until just combined. Scrape into loaf pan and smooth top with spatula. Bake at 350* for 55 minutes (A wooden tooth pick inserted into the middle should come out clean). Remove from oven and let stand 5 minutes. Transfer to a wire cooling rack.
