My condo association has finally allowed grills on our patios..just not propane. I have a charcoal grill picked out. Then it dawned on me..as God as my witness, I have never grilled! I have always relied on the kindness of strangers having lived in apartments and such.

So, if you had to recommend a book, not looking for recipes..yet.., that explains how to grill, using charcoal, what would it be? I am looking to grill meats, fish, and veggies.

Thanks!

I'll add the Grilling and BBQ book from Cooks Illustrated/ATK/ Best Recipe. It's all about technique. I use this along with a few Steven Raichlin books like BBQ Bible and his Rubs and sauces book. You'll be grilling/'cueing great stuff in no time..

Usually when you buy a grill, it comes with basic info: how to stack charcoal, how to light it,vents open or shut, how to tell how hot etc. Cruise a store and see what books come with the grills. We began with a Webber Kettle and their books have been great.
