Valentine's Chocolate Orbit
OMG this was really good. Even with a major cold and running a temp it was not too onerous to make and really tasted good. i had to get the rest of it out of the house or apply it dorectly to the thighs. The recipe came from the Scharffen Berger Essence of Chocolate. Okay, I did not follow their recipe exactly. As I said I was sick, we'd just had an ice storm and I was going ahead with what I had. No runs to the store.
Butter a 9"X2" round cake pan, mine is 9"X 1.5" I figured half an inch in this was not going to matter and it did not. I just sprayed it with Bake Ease, fitted it with a parchment round and sprayed that too.
In a double boiler over simmering water melt 14 oz. unsalted butter with 10 oz. chocolate. What I had on hand was 4.5 oz. 62% and 5.5 oz. 70%, I figure the darker the better anyway even though they wanted all 62%. While that is melting combine 5 eggs with 1 C. sugar and whisk until sugar is dissolved and eggs are a bit fluffy. Prepare a bain marie for the cake pan and heat the oven to 350 F.
When the chocolate and butter is melted, stir to blend well and whisk it into the eggs. Pour it all into the prepared cake pan and cover with foil, I used the non-stick variety. Put this into your bain marie ( I used a roasting pan) add boiling water to come halfway up the side of the cake pan and bake 75 mins. Then remove from the oven and the water bath and chill 2 hours. Mine got put outside on my porch for about an hour, it was a very cold night. Turn out onto a platter and slice into 12 servings. The recipe said that after 2 hours or 3 days of chilling you might need to warm the bottom of the pan briefly to get it to loosen from the bottom but I had no trouble. Mine was cool but not cold when I turned it out. Don't try to eat the whole thing yourself, you will end up in a chocolate coma. A slice is enough for an orbit. They suggested whipped cream with it. I think creme fraiche might be better, had a bit of Kahlua with it last night, had a very good non-peaty single malt on V.Day. A raspberry coulis could be excellent with a few raspberries on the side? How about just a little dollop of Meyer Lemon Curd?
This is very similar to a chocolate mousse cake I make, but it's made in a springform pan and has a hazelnut crust. They suggest a chocolate whipped cream but I love the idea of a raspberry coulis and fresh raspberries. I love the recipe--really simple and rich.
