I realize this is an old post, but if anybody stumbles across this on Google as I did, try out Medium Rare in Etobicoke. Picked some andouille up there last week, it was fabulous. Frank (master butcher that runs the spot) told me "I used Emeril's recipe... except I kicked it up a notch!"

Good to know. I've smuggled some in from down yonder and haven't used it all up yet.

A smoked sausage with cajun seasoning cooked with it works well too.

The Healthy Butcher had andouille...but at a price that would make a cajun chef have a heart attack...

St. Lawrence Mkt. south side just south of Paddingtons meat shop there with andouille. Haven't had it yet but the other sausages have been good.

That would be The Sausage King - and yep, he carries Andouille sausage.

That's where I get mine up here.

            Other great Cajun stuff too.

Perhaps the Cheese Boutique? I haven't seen any in Kensington, though I haven't looked that hard. I substituted another smoked sausage for andouille in a recent recipe.
