Are there any chefs particulary know for their use of herbs...

...or spices, but I'd prefer herbs.

Jerry Traunfeld is the only chef whom I know who has such a speciality. Could anyone help me with more?

      Definitely Tuscan chef Cesare Casella. His personal cuisine is so full of herbs and he wears a sprig of herbs on his chef's jacket as a corsage. He pioneered the now commonplace Tuscan Fries that are cooked in herb-infused oil.

            Well, since Jerry is at The HerbFarm, what else would one expect?

            Claudia Fleming, formerly of Gramercy Tavern, made lovely use of herbs in some of her desserts. You can read more in her cookbook.

            Corey Lee and Claire Clark both make great use of the herbs available in the Napa Valley, some in TFL garden.
