Suggestions for a Go To Cocoa Brand

I posted a similar question on the Media board because I was watching Nigella's show last week on chocolate desserts-what brand of cocoa is she using? I have the recipe for Texas sheet cake and am need of a good cocoa. The last one I made with Hershey's Cocoa was off the mark. Is there a good Dutch cocoa I need to fill in gaps in my pantry? Any other must have baking chocolates for desserts? Thanks so much for help

        I like Valhrona and Pernigotti. I think they're both dutched, but their flavors are rich and they produce a very dark color.

          Droste is excellent and widely available. Other top choices are the organic Green and Black's (available at Whole Foods) and Pernigotti (available at Williams-Sonoma). Both of these are made in Italy.

            I love Droste, which is available in my (Boston) supermarkets, especially as a drinking cocoa, but I've also been VERY happy with Penzey's cocoa, both natural and dutched. BFP makes Alton Brown's brownies with the natural cocoa, and they're hands-down the best brownies I've ever had.

              I buy dutched cocoa at Penzey's, but not everyone has a shop locally. They do mail order, of course. I'm very happy with the flavor and fat content. I'm wanting to try some of the higher fat cocoa carried at King Arthur Flour in VT, but the shipping charges (to KS) are high.

                A second for the Penzey's cocoa (dutched and natural). Excellent flavor. I'm not near a store, just order it through the mail and am perfectly happy!

                The only brand of cocoa I use is Droste.

                  Second Droste. For drinking, baking, rolling . . . anything. It's mid-priced and versatile.

                  Scharffen Berger it is undutched and is richer in baked goods. Hershey's is dutch processed and just cannot deliver the richness.

                    I don't believe Hershey's is a dutched cocoa. It's always been natural, as far as I knew? They used to make a dutched product, labeled as "European," but I haven't seen it in the markets for a few years now.

                    For baking and drinking I use Scharffen Berger, or Ghiradelli if I can't find SB. Hershey's isn't rich enough, IMHO.
