Low Fat Cheese

What are your low-fat cheese recs (specifically "cheddars", but others are welcome)? I'm not trying to find something I'd serve on a cheese plate, just something that would melt nicely in a gringo burrito. For this use, flavor trumps texture.

    Among US makers, only Cabot is acceptable.

      i also like the cabot light cheddar. they sell it in a block, or as slices. haven't tried any other brands though.

        I've sampled Kerrygold reduced fat cheddar and thought it was pretty good. The sign at the sampling station said that it had 48% less fat than their regular cheddar.

          I like the Cabot light Vermont cheddar. Or the Cracker Barrell 2%.
