I am definitely going to try this!  Sounds very tasty.  I sort of would want there to be cinnamon flavor right in the vodka, though.  Could I do that?  Maybe just add some ground cinnamon with the honey? </content>

      <content>I would use the best quality sticks, not ground, so it can be filtered out easily. Also it will be easier to control the final taste since you can remove the sticks from the batch as soon as you get a hint of flavor. Cinnamon can be very potent and when I use it I usually only let it infuse for a few hours.</content>

      <content>This sounds great!  And it's just the thing to help me with my New Year's resolution to eat more oatmeal.  

I agree with JMF that using cinnamon sticks for a short time would be the way to go.  Taste every few hours :-) and take 'em out when you think the cinnamon flavor is strong enough.
