Really great coffee (not espresso)

I was down in NC and went to a coffee shop called 3 cups where they are rather obsessed with coffee. They source the beans themselves, often developing personal relationships with individual small coffee producers. They then (I think) roast the beans, they certainly told me that I shouldn't get one particular type because it had just been roasted and it takes a few days post-roasting before the beans are at their peak. They then give you an individual french press with your coffee, along with a timer so you know when it is ready. The coffee was amazing, I wanted to drink it black to taste all the flavors. I realize I have not had this experience in NY, though I assume it must exist. Thoughts?

Cafe Grumpy in Chelsea--there was some discussion of this place a few days ago if you can find it.

Cafe Collage on Bleecker also does individual french press pots.

You have to go to Porto Rico on Bleecker near 6th avenue. They serve the best coffee in town and you can also buy different kinds of beans there. There is a park bench outside where you can sit and watch people go by on Bleecker!
