Chicken tonight-- Zuni or Barefoot Contessa?

Which works best with a chicken cut in 1/8ths?

Also looking for easy vegetable and starchy sides!

    Roost your vegetables right alongside your chicken. asparagus and Grape tomatoes are soooo good this way--especially with a bit of onion or shallots-or both!

      Isn't it too late for Zuni chicken? The essence of the recipe is that it is dry brined for hours.

      If it were "chicken tomorrow" I'd vote Zuni. Pan roasted.
