Grandma's butter sauce for spaghetti

lisaburnem Feb 2, 2007 08:29 AM

My grandmother used to make this marvelous butter sauce on her spaghetti. I know it has butter and milk, but something is missing. Has anyone every made or heard of this?

It almost sounds like an alfredo sauce: butter and heavy cream with parmesan. Perhaps a variation of that?

I just made a sauce for dinner that had butter and flour (roux) and milk and was seasoned with nutmeg and S&P. I tossed al dente pasta, ham chunks, and green onions in it and then sprinkled the top with parmesan. Then I browned it onder the boiler. It was very delicious.

Not sure you need the milk. My MIL made spaghetti tossed with unsalted butter, topped with fresh grated parmesan cheese and chopped green onions...Wonderful!
