Novice home chef here....
I was watching Barefoot Contessa the other night and she used both butter and olive oil to sautee some mushrooms.
What is the reason for using both? Is it flavor? Is it varying burn temps of each?
It's not uncommon to mainly us olive oil and add some butter for flavor. The most common way to use it is cook in olive oil and add butter at the last moment before it's done.
Butter will burn/smoke quicker than oil, so you use butter for flavor, and oil to keep the butter from smoking so soon.
