How long does miso paste last?

Inspired by the miso paste post below, I rooted (sorry) around the fridge and found a tub that's been sitting there since last winter. Can I still use it? And while we're at it, what are your favorite quickie recipes? I add various veggies and seaweed and a little tofu.

    Had to wake up a long dead thread but...my shiro miso changed color (darker) is it still okay to use?

        A second to that "yes". Properly sealed & kept in the fridge, Miso is nearly invincible.

        I am still using miso that's at least 2 years old...and it's great. It almost tastes better now than when I bought it.
        Kept in the fridge, in packaging excluding air. A little goes a long way and I evidently bought too big a package for my needs..but in the end, no regrets.

          It will last longer than your fridge.

            I keep mine in the fridge - Maybe a year now and it's fine. Miso is already fermented but, keep in the fridge, sealed and it will last eons.

              I was wondering this myself. I think I've had my container for years. I used some about 6 months ago and it was fine -- no one died. And I didn't notice any nuanced loss.

                It should last for a very long time. Months are just a drop in the bucket when it comes to the lifespan of miso.

                  properly sealed
                  6 mo. to a year

                  tho' some preserve much, much longer

                  Andoh suggests in Washoku that shiro miso is best used within 6 months otherwise one faces degradation of nuances

                  I've kept shiro miso a year in the fridge no problemo
