Favorite Panini Combinations

I've recently pulled out the panini press for lunch time sandwiches. Any good suggestions for easy to make combos. I'e been having chicken, roasted red pepper, and provolone or thin smoked ham, cheddar and tomato. But I am getting tired of those. I would love some new ideas.

Well, what a coincidence--I started a thread just yesterday asking folks for their favorite recipes using their panini press. There are some GREAT suggestions posted under that thread. Also, I noted someone else just today posted a very intriguing recipe for potatoes using the panini press. Check both these threads out!
