Need help with 1/2 turkey!
What should I do with about 6 lbs. of turkey besides roasting or frying it? Nothing complicated, please.
You could gently poach it with some aromatics like a bit of white wine, black pepper corns, salt, celery, carrot chunks and white onion. After the turkey is cooked, strain the broth and add some rice for a quick and very simple turkey rice soup
If you have a flameproof casserole or Dutch oven, you can season the turkey pieces, then brown them in oil in the pot, probably a few at a time. You can also fry chunks of onion, carrot, celery or whatever, and add a pinch or three of thyme, rosemary or whatever. Then put everything back in the pot, pour in about 3/4 cup of broth, white wine, bouillon or a combination of any or all, put the lid on and stick it into a 350º oven for about 1 1/2 hours or until it's all tender. Sometimes I put in a can or two of Ro-Tel tomatoes & chiles and a bit less liquid. You can put chunks of potato in for the last half-hour if you like.
