If you have a flameproof casserole or Dutch oven, you can season the turkey pieces, then brown them in oil in the pot, probably a few at a time. You can also fry chunks of onion, carrot, celery or whatever, and add a pinch or three of thyme, rosemary or whatever. Then put everything back in the pot, pour in about 3/4 cup of broth, white wine, bouillon or a combination of any or all, put the lid on and stick it into a 350ยบ oven for about 1 1/2 hours or until it's all tender. Sometimes I put in a can or two of Ro-Tel tomatoes & chiles and a bit less liquid. You can put chunks of potato in for the last half-hour if you like.
