I am making some breakfast sausage probably using the classic flavors of ginger, sage, nutmeg, and red pepper. To clarify, I am grinding my own pork. Just wondering if anyone has any recipes with ingredients I didn't mention that I just have to try. Maple syrup or brown sugar mabye or does that make it too sweet. Thanks in andvance.

My parents recently butchered a whole hog and made some of it into breakfast sausage (patties, which they froze). We determined that the simplest recipe was best: lots of salt and black pepper, plus just the barest touch of brown sugar to help it brown nicely in the pan. Really, that's all.

Not pork, but I love Bruce Aidell's chicken and apple sausage for breakfast.
