I had dinner at Soba Koh Tuesday night and was delighted!

Momofuku. Hit it last--anything afterwards will be a disappointment.

Santoka ramen in Edgewater, NJ. Look no further.

Ditto the ramen at menkuitei near St. Mark's, Nha Thang in Chinatown, and I'd add handmade noodles at NY Noodletown in Chinatown on Bowery and Bayard. Also, if you find a good zha jiang mein somewhere, post back.

Yes, do share. Cha jiang mein, cham pong, bring on the Chinese-Korean noodles.

Men Kui Tei is a good place to sample ramen, specifically. And, of course, Momofuku is a good place for noodles.

Also, Yang Pyung Seoul for Korean-style noodle soups.

Check out Hong Kong Station on bayard street between elizabeth and mott. You can also search for "hand pulled noodles" in chinatown.

kampuchea noodle bar on allen cor rivington, chinatown - many noodle spots there. try NY noodletown on bowery below canal st. vietnamese- try nha thrang and thai son on baxter. malaysian there's nyonya on grand and mulberry. you can just walk around chinatown and peruse the menus and be able to see try -out a wide variety. for japanese, i would check-out soba-ya on 9th st. bet. 2nd and 3rd ave. they have good hot and cold noodles and there are loads of other japanese joints nearby to check-out as well.
