I'm craving Kuma's Chinese Sausage. Are there any similar dishes (predecessors, knockoffs, anything) nearer to my home base in Hell's Kitchen? Thanks!

you should just go to chinatown and go buy a whole bunch (its called lop chong in cantonese)...its very cheap and will taste exactly the same as kuma (and will be much cheaper). Go to like Kam Man on canal, they have a big selection. Cook some rice and then when its done, just stick the sausage in there for like 10 mins and it'll be ready to eat
