        <content>Came across this updated information on Delfina's pizzeria on their website.  I, for one, can't wait.  Wonder how they'll compare to A16, for one thing.  Interesting hours (i.e., 11 am - at least 10 pm six nights a week).

It seems destined to be oversubscribed.  How does one enjoy a meal knowing there is a 100% turnover in line?, How does one enjoy this as takeout more than 5 minutes away?
 
I summarize by guessing that they are thinking as chefs: what leaves the oven will be great.  But the dining experience, I fear, will be less so.

If you have spent time in Italy then you know 
Nothing compares. 
Sit at the counter and watch the guy with mutton chop sideburns "pizzaman" 
Notice how he manages the fire, adds wood chips when the smoke level is too low, how the temperature is always kept above 700F 
My favorite is tomato sauce fresh mozzarella with added arugula at the end.
