Buffalo Sausage Recipes?

Anyone ever made bufflo sausage? I was thinking about rendering buffalo suet for fat, anyone try this before?

    Yep I mixed 2 lbs. ground pork fat with 5 pounds of ground buffalo . I ground my own pork. Spices I used were 2 to 3 Tbls. minced garlic from Costco. 1/4 ounce Marjoram,1 Tbl.kosher salt , ! Tbls. ground pepper and 1 cup of water. Mix all together and put in Fridge at least overnight. I use the same ingredients for Polish sausage. It is pretty dry without the porkfat. Sounds like a lot of fat but it also adds flavor to everything.

      I've made buffalo meatloaf with bacon, which made up for the fat the buffalo was lacking. I'd say old traditional pork belly fat would work fine unless of course you have actual buffalo suet handy, but in that case, don't render it, just run it through the meat grinder cold along with the buffalo in the proportions to get the right fattiness for sausage.

        Thanks for the info, have you tried to grind suet before? I havent but I read beef suet gets caught in the grinder. Im new to sausage making so i want to make sure before i order products. thanks

        Buffalo is much to lean for sausage making on its own. You need a another fatter meat like pork shoulder and also a little fatback. We made it recently it was great.

          I've never made them, but I wonder if buffalo alone would be too lean for a good sausage. You may want to try a blend of meats. I was at a restaurant in NH and ordered buffalo and wild boar sausages that were delicious!
