Chinese Chicken Salad
This is a recipe an Aunt gave me, it is a favorite at our family pot lucks.
1/2 lb cooked shredded chicken breast
2 oz bean thread noodles, deep fried
1 small head lettuce, shredded
4 green onions, cut into slivers
2 stalks celery, cut in to slivers
cilantro
2 T chopped toasted almonds
2 T toasted sesame seeds
Dressing:
2 T sugar
1 t salt
1 t msg
1/2 t pepper
1/4 cup salad oil
1 T sesame seed oil
3 T vinegar
I use her recipe as a starting point. For color, add carrots, bell peppers, ?. I like honey roasted peanuts over almonds. I don't use the msg, and I use more vinegar. I use 1/4 t white pepper vs 1/2 t pepper. I may substitute "spring mix" for iceberg lettuce.
