A challenge: Sweet peppers

dimples Jan 22, 2007 12:56 AM

I bought a small pint container of beautiful orange and red "mini sweet peppers" from my coop. Any suggestions on what I could do with them?

They are wonderful! Stuff with Boursin cheese for an appetizer or snack, or dip in hummus or baba ganoush.... slice in salads, stir fry, add to soups, stews, the sky is the limit... Enjoy!

Chevre is another good cheese to stuff in those. I had'em like that served hot at City, the second incarnation of the original restaurant of the Ciudad/Border Grill women. As Mrs. O won't touch sweet peppers I had'em all to myself!
