I would like to avoid white wine (sherry is ok) and mustard. tia for any ideas.
I have two frozen Maine lobster tails I received from Lobstergram today.
saffron goes great with lobster. i saute garlic, butter, a little cream and a few strands of saffron and reduce by 1/3 or 1/2. yum.
What's wrong with just the grill, browned butter and garlic?
Cause that's not what I want :)
Maybe it's a Bechamel you're looking for? Or, Bearnaise. How about a roasted tomato cream with Marsala instead of sherry. - That's how my brother does it but, w/tiger shrimp.

I've had it grilled and it was ok, but the best lobster I ever had came with a cream sauce (I don't know the name) and so that is what I am looking for.
any version of a beurre blanc or rouge would be an easy solution.
shallot, cognac, cream
a maltaise (hollandaise with rind and juice of blood oranges)
