Cabbage Soup

I have a half a head of cabbage and would like to make some kind of soup with it. Any suggestions for other additions and seasonings would be appreciated. Thank you.

  1. Tomatoes, carrots, onions, chicken stock, garlic, salt, pepper, corn, celery and chili pepper all come to mind. Add some oregano, thyme or even dill. You could even add beef, chicken or pork if you like but a vegetarian cabbage soup can be so hearty and filling, you won't miss the meat.

    1. I was in the same situation last week and ended up making a terrific Hungarian Cabbage Soup.
      Veg stock-onions, garlic, carrots, celery, S&P
      Flavorings-caraway, paprika, dill
      Additions-tomato paste (or sauce), red wine vinegar

      I blended the stock and the flavorings with a stick blender after they were fully cooked in a bit of olive oil. Then added the chopped cabbage and simmered for about 10 minutes. When the cabbage was cooked, I added the tomato and vinegar, heated it all up and served with a bit of yogurt, garnished with parsley.

      1. I've found that adding a big tablespoon of Dijon mustard right at the end (about 2 minutes before serving) add's a nice flavor dimension.

          I sauteed onion, red pepper, celery, carrots and the cabbage. Added some flour and stirred for a while included some seasonings of coriander and tumeric along with salt and pepper. After cooking for a while, I added some cilantro and more seasonsed salt. I have it in the fridge and haven't had it yet but maybe tomorrow for lunch. Thank you for all of your help.

        2. i was thinking hot and spicy. chicken stock, scallions, chilies, ginger, finish with lots of lime juice and a little sesame oil. tofu or a little shredded chicken for protein.

          or cabbage, bacon and white bean soup, with lots of garlic, thyme and rosemary.

          1. sweet and sour...like a russian borsht...carrots, onions, celery, cabbage, canned diced tomatoes, beets if you like, caraway seeds, raisins, lemon zest, lemon juice, brown sugar...mmm good

            1. Cabbage is a great element in minestrone.

              1. Growing up my Mother made a soup she called Puchero. I don't knopw its origin but is a delicious meal. She would take a brisket, uncorned, and put it in a large pot with onion, carrots and celery , bayleaf and peppercorns. She would cook it for several hours and then when it was tender she would add a head of cabbage cut into chunks, a couple of quartered potatoes and a can of drained garbanzos, salt. Once the pototoes and cabbage were done she would take out the meat and slice it up then serve everyone a big bowl with a piece of meat a bit of potato, a chunk of cabbage and top it off with broth and a spoonful of rice. I always hated the garbanzos when I was a kid but now I love them and the cabbage is so sweet and mellow. The broth and the cabage are always my favorite part. Oh and she served it with a hot sauce which is a whole nother recipe and I'll give it to you if you want.
