Providence- Sushi?

Providence is the answer for outstanding Sushi with Japanese style cooked fish, menu below from last night.
Absolutely Incredible!
I talked to Hiro Urasawa at IMP this morning and he's going to Providence tomorrow (fri)for lunch , he's knows his Sushi.

Chef’s menu

kumamoto oyster
lemon gelée/american caviar

satsuma tangerine, yuzu kosho

kanpachi sashimi
white truffle, olive oil lemon, soy gelée

big eye tuna
pea tendril soup, carrot/vadouvan espuma

dungeness crab
blood orange, nasturtium, beet paper

maine lobster risotto
cinnamon, black truffle, pistachio nougatine

nancy’s diver scallops
tahitian squash, lardon, rosemary, shimeji mushroom

st. pierre
late harvest gewürztraminer, emulsion, piquillo peppers

wild quinault river steelhead
foie gras ravioli, crosnes, truffles, pied de mouton



frozen banana capsule,
liquid frangelico caramel center,
chocolate sorbet

      1. I'm curious about what you mean by "Providence is the answer for outstanding Sushi with Japanese style cooked fish". I've been to Providence several times, it's the sushi part that I didn't understand.

          Providence is able to create fine Japanese Style dishes is what I mean.
          Apparently Hiro from Urasawa thinks the food is pretty good also. He's been there twice and he's the Master of Japanese Cuisine for most of us, especially in LA.

      2. i was there last week. It was one fo the best meals I've ever had. I had the tasting menu and the kanpachi/tuna tartar was exquisite.

          I couldn't agree more. I'd eat there every week if my purse could handle it.
