        <content>Get yourself to Opus next Tuesday. Have a Baco, maybe two. 

Went last night a little later on... after 9pm. Sat at the bar. Bought some wine from the list - a nice cabernet blend from South Africa. Very nice. I believe it was called Roodebergh (sp?). Had a few other things as well. Several changes on the bar menu - new drink concepts, new wines, and of course, the bacos.

Had three different bacos - yes I am somewhat of a big eater, but I did share with some folks. Had the "The Baco" which is the original one. Primary protein is carnitas beef short ribs and fried pork belly. Really great... just terrific. 

The other two bacos I had were:

Lamb and Chorizo baco - lamb meatball with chorizo, avocado, caraway pepper sauce, radish, and gallego. Tasted like the most awesome, upscale Mexican street food like taco, but very refined and delicious. 

Fish baco - skate wing, pickled mint cabbage, and garlic chive dressing. This was like a super duper high end fish taco, but so much more. 

The thing is... this baco thing is a great concept. Hearty, tasty, truly comfort food. Like the worlds perfect heavy snack. Each baco is $8 and can easily be a meal for a normal person... if you're really hungry or have a big appetite you MAY eat two. Rough food size equivalent... I had lunch at Langer's yesterday... one baco is probably around 2/3 of a #19 or thereabouts. 

Even at 9pm, there were a few people at the bar still eating bacos. I wonder if it was crowded beforehand. Gotta try. Really good. Might be a regular Tuesday thing for me.</content>

      <content>thanks for the the review of the baco's. i've been meaning to try it since josef mentioned them to me, however, i have not found time to jet out there on a tues as of yet.</content>

      <content>So the chef there has come up with a new taco like concept he calls a Baco. He says it's short for "Global Taco"

Imagine a piece of a hybrid flatbread/tortilla, racetrack shaped on the plate. On it are the toppings/fillings that are mentioned above. 

Picking one up and eating by hand is more than a little messy... but not altogether unpleasant. Knife and fork also works well.</content>
