ISO ginger-carrot tea sandwich recipe

Had wonderful ginger-carrot tea sandwiches at an afternoon tea recently. Looked online, but I couldn't seem to find a good recipe. Any help is much appreciated!

    Not having tasted the sandwiches, all I can think of is roasted carrots puréed with ginger and cumin, possibly a little tahini, and spread on dainty bread.

      See, I pictured more like grated carrots... perhaps we need more information?

      Oooh, I want that, too. I had some lovely carrot tea sandwiches for tea at the Empress in Victoria, BC.

        We shouldn't be so lazy: I googled "carrot ginger tea sandwiches recipe" and the first hit was the recipe from the Empress!

        I believe the sweetened ginger paste the recipe calls for could be the ginger spread Trader Joe's just started carrying (which is made in Canada0.

          Interesting... not much to them! I think cumin would be an interesting addition like piccola suggests; dried cranberries would be good too.

            That's what I couldn't wrap my head around! I found that same recipe, but couldn't figure out what "sweet ginger paste" was. I googled that also, but never found a recipe. Thanks for the TJ tip!

            We also had the lovely tea sandwiches at the Empress Hotel in Victoria. It was a wonderful taste sensation. I'm going to check out Trader Joe's to find the sweet ginger past. Wish us luck as we are having a Tea tomorrow and hope to include the special carrot sandwiches!!

              That ginger spread is wonderful, but I do gather from friends that they don't always have it. There are also ginger jams, which might work as well. The paste is also great in hot water as a drink, with a squeeze of lime or lemon, if you find it.
