Candied Garlic Recipe

I'm planning to roast some marrow bones, and would love to serve them with candied garlic (as is done at a local restaurant--it's yummy), but I'm pretty mystified as to how to do the garlic. It's served in small ramekin with softened cloves of garlic in a sweetish sauce. Any ideas?

  1. My guess is that the garlic is roasted, which would be very sweet.

    To roast, cut off the tops of the head to expose the cloves, sprinkle with a little olive oil, and place in a 400 degree oven for about one hour....delicious!

      Thanks. I've roasted garlic often, and the consistency is absolutley what I'm looking for. But then there's the sweet/garlicky sauce I can't quite figure out how to accomplish.

    2. "Quick & Easy Tsukemono" has a recipe for garlic in honey - the cloves are peeled, covered with honey, and stored for a month.
