Whole Grain Pancakes [Split from thread on What's My Craving board]

I've never found whole grain pancakes as good as the ones I make myself and they take so little time!

For 4 large fluffy pancakes:
1/2 cup whole wheat flour
1/4 cup corn flour
1/2 cup all purpose flour **Feel free to use different flour combos- most seem to work in this recipe but I love this combo
1 tsp baking powder
1/4 tsp kosher salt
Mix dry ingredients, set aside

Wet: 2 tsp vegetable oil, 1 TB applesauce, 1 egg yolk, approx 1 cup milk (depends on consistency of mixture- before you fold in the whites it should be on the thin side like crepe batter). Stir into wet

Beat 2 egg whites in seperate bowl. Fold into wet mixture. Should be thick but pourable. Spray griddle, cook, enjoy!
