        <content>The first time I ever tried fudge (about four years ago?), it was made with goat milk and sold at the weekend farmers' market in the town common. The seller didn't come by the following year, and I've been wondering since whether that first taste was a fluke-- whether the goat milk made that great a difference in the flavor.

Any suggestions as to where I could find some goat milk fudge?</content>

      <content>hotoynoodle, I have to agree with you. I live in a rural area of N-E Ohio with a large Amish population, and I can obtain goat milk for a very reasonable cost. I prefer to use goat milk over that of cattle for many  sweet and savory recipes.

Goat Milk Fudge

2 cups sugar
2/3 cup Goat Milk
1/3 cup cocoa
2 tablespoons white Karo Syrup
2 tablespoons butter
1/4 teaspoon salt
1 teaspoon vanilla
1/3 cup nuts

Cook sugar, cocoa, syrup, butter and milk to soft ball stage - 238 F. Cool slightly, heat until creamy and add vanilla and nuts.</content>

      <content>I make goat's milk fudge, and I'm in Central MA. Does that count? I haven' t tried cajeta yet, but as soon as the milk starts flowing again, it's on my list. 
My fudge is very sweet and creamy. I make mainly chocolate, but have made peanut butter chocolate as well. My little goats have the thickest creamy milk, so the fudge gets the benefit from it. Never a "goaty flavor," either. That's one reason we chose these goats.  </content>

These ladies run a picturesque farm and make some great cheese...AND goat milk fudge.

You'll note you can order from the website.  If you do, I HIGHLY recommend the goat feta packed in oil, and the apricot almond cheese ball.  (you want to be alone when you get the order so no one sees you eat an entire cheese ball)</content>

      <content>I'll second the Split Creek rec.  Their fudge is very good.  I can't say, however, that it tastes all that different from fudge made from cow's milk.  Maybe I'm not enough of a fudge connoisseur to detect the difference.

I haven't tried the cheese ball, but it sounds really good.</content>

      <content>wow, im totally interested in this, too! i am a big goat's milk and goat's milk product-fan. i make kefir and yogurt from goat's milk. i never was too into cow's milk products but i am pretty heavy into the goat stuff. im reading the split creek site now. cheers.</content>

      <content>We have Capriole goat cheeses at our local farmers' market, and they make a chocolate-bourbon-pecan confection that I love.  It's probably more like a cheesecake than fudge (although not cooked), but it might be worth trying if you like that goat-cheesey twang.  I'll find their website and add it.</content>
