Need a meat for a salad...

abu applesauce Jan 12, 2007 08:35 PM

I'm going away for a few days and I want to clear out fridge. Tonight, I'm making a huge salad with basically everything perishable in my fridge. Although I have some proscioutto, I want some more meat (or chicken) that I'd be willing to purchase/cook that wiould go well with the following (I'm thinking roast beef, fyi) Here's what's going in salad so far:
Spinach
Artichokes
Proscioutto
Fresh (not so fresh anymore) mozzarella
Olives
Peppers
Cucumbers
Red Onion (optional)
Chickpeas (optional)

What should I add?? Should I just grill chicken breast? Should I buy quarter pound roast beef and cut it up?
Any interesting ideas?

I guess its just me but that sounds like a fine salad just as it is... prosciutto and everything. And I would add the chickpeas (there's your protein) in lieu of more meat.

The chickpeas are an incomplete protien. They need to be combined wirth something like rice to be come a complete protein. So more meat will be wanted.

please do not give nutritional advice if you have no idea what you're talking about.

all those strong flavors, i'd use chicken thighs. but i prefer dark meat to light! would all be yummy with a nice lemony dressing.

Buy a rotisierre (sp?) chicken if you really want to add something. Yes on the garbanzos and red onion! But it sounds good as is.

Definitely chicken, maybe even grilled (or broiled) shrimp... I wouldn't do the roast beef because I don't think it compliments the other flavors as well, but that's MHO. Sounds good so far, though.

            Smoked fish, perhaps trout.

i'd use some tuna. grilled or pan-seared would be best, but canned would probably fit with everything else here too.

some nice chunks of soppresata salami would be terrific and some sharp provolone would do the trick.
