Need help with fundraising dinner--seafood themed
Howdy, I'm cohosting a dinner for twelve parents at my son's school as an auction fundraising dinner. It's a crab feast and all the guests can eat all of the food with their hands. For apps, we're having fresh oysters, prawns wrapped in rice paper with mango, and possibly fingerling potatoes with creme fraiche and caviar although I could use a replacement for the latter.
The main course is an Asian inspired roasted crab with Champagne, soy, oyster sauce, red pepper flakes, green onions, and other ingredients. The salad that was served last year was a traditional Caesar. Can anyone think of another salad that can be eaten without utensils that fits more into the theme?
Dessert is chocolate fondue. The same parents are coming this year who bought the dinner last year so they loved the food, we are just thinking of changing it up a bit. Thanks for your thoughts and ideas.
How about miang kum, the Thai appetizer ometimes called "one bite salad". Big spinach leaves rolled up around peanuts, dried shrimp, purple onion, cocnut, and chilis...Or, maybe a green papaya salad, scooped up with fried shrimp chips.

I think those are too messy for appetizers for this dinner. They will be sitting in a living room and I think we need one bite apps. Sounds good though.

What about using endive as a utensil?
You could place a small seared sea scallop (or a few bay scallops) on a leaf of endive, top with a crumble of roquefort cheese and a drizzle of vinaigrette made from lemon juice, walnut oil, salt and pepper? Pretty much one-bite and fulfills the salad role.

I would suggest endive as well. It serves as a 'spoon' for any number of fillings/toppings. You might dice some sushi-grade tuna, and mix it with a dressing of soy, ginger, rice wine and scallions. The colors would be pretty.

How about "salad on a stick"--slices of cucumber (marinated?), olives and cherry tomatoes on wooden skewers?
