Decorative Fruit and Vegetable Carving??

Am helping some folks with a party and they are smitten with "Edible Arrangements" which I find sort of corporate and more than a little tacky. Not to mention these folks live adjacent to Thai Town. Does anyone have some suggestions for anyone who can do some groovy edible center piece type things. Much obliged.
