Frosting cupcakes with ganache?

saraeanderson Jan 10, 2007 12:42 AM

Is it blasphemy? I was going to make this cake

and got all the ingredients, only to come home to find I only have one round cake pan. I do have muffin tins, so I think I'll do cupcakes, but will the ganache work? Will it look so dumb that no one will want to eat it?

No, it will be great. You could either dip them when the ganache cools to the right consistency, or you could cool it in the fridge and whip it. Then frost.

It will be fabulous... just wait until it cools enough.

Too much and it will be too hard, too little and it will be runny.

I use ganache all the time on cupcakes and brownies.

I just made that cake for New Year's, and I think it would be fabulous as cupcakes. It's light enough that it won't be gross.

I used cool ganache to frost the cake, so you can see what kind of texture you'll get (grainy, more like frosting): http://www.chezpei.com/uploaded_images/DSCN4306-705106.JPG

If you dip while the ganache is warm, you'll get this shiny look instead:
But don't be lazy like I was. Melt the chocolate all the way through to avoid lumps!

          those are very pretty cupcakes!

20 fairly large ones. It would easily have been two dozen if I'd wanted them to just come up to the sides of the paper.

My girlfriend, an exceptionally talented baker, says: "The punctuation on that subject is all wrong. That should be an exclamation point, not a question mark."

I double-dip cupcakes when I am using a ganache as frosting and it works fine.
