I bought some sunchokes from the market.

Now I'm not sure what to do with them. Any thoughts?

    I also like them raw, thinly sliced. They taste quite a bit like jicama that way.

      I got them a couple of times from my CSA this year. They are tasty - can be served like mashed potatoes or as a pureed soup - but if you haven't had them before, go easy on the first serving. They are associated with... gastrointestinal issues, to put it obliquely... in some people (myself included).

        This past weekend I bought some as well. I peeled them as much as possible, quartered them, tossed them with a little olive oil, salt and pepper, and roasted them at 375 degrees for about 30 minutes. They were so good.
