I bought some sunchokes from the market.

Now I'm not sure what to do with them. Any thoughts?

    The artichoke sunchoke soup looks good.

    1. This past weekend I bought some as well. I peeled them as much as possible, quartered them, tossed them with a little olive oil, salt and pepper, and roasted them at 375 degrees for about 30 minutes. They were so good.

      1. I got them a couple of times from my CSA this year. They are tasty - can be served like mashed potatoes or as a pureed soup - but if you haven't had them before, go easy on the first serving. They are associated with... gastrointestinal issues, to put it obliquely... in some people (myself included).

        1. I also like them raw, thinly sliced. They taste quite a bit like jicama that way.
