Sable fish
Is it possible to get Sable in the SFV or LA? I once asked "Brent's" son in law about it. He said there was not enough call for them to serve it.

I've seen smoked black cod (same species as sablefish) at Quality Seafood in Redondo. The ones I've bought there are cut into steaks, not filets. Does that matter?
There's also a wholesale producer of smoked fish in Glendale. Their products are all over the L.A area (near me in Irvine, I buy it at Wholesome Choice). Can't think of their name just now, but I'll repost if it comes to me. You might track their stuff down closer to you.

That brand produced in Glendale is Seven Seas. They make a range of hot and cold smoked fish from rainbow trout, steelhead, whitefish, capitan, sturgeon, & probably others. I imagine they make sable, but I don't know for sure.
When I first saw it in the store, I thought capitan might have been the same as sablefish, but it's not: aparrently balic capitan is a Slavic name for escolar.

Minx, Maison Akira, Asakuma, Matsuhisa, Shiro and Beacon all serve it.
Don't know of any place that offers "smoked sablefish" however.
Whole Foods also sells it.

I've gotten smoked sablefish as an appetizer at Moonshadows, on the PCH. It was delish, coupled with grapefruit segments in a salad.

Sable IS smoked black cod. When Nobu serves it, that's just black cod. Barney Greengrass has the best, like butter, straight from NYC.

if you are talking about the Sable you eat with bagels like you would lox... nate and al's is the only place i've found it in LA. one of my all time favorite foods. i'll have to give Barneys a try.

You can get the smoked sable for bagels at Gelson's. They sell the Lasco brand. It's in the deli case next to the lox.

Katella Deli is Los Alamitos also has the smoked cod.
