SF dinner

I am planning a very special dinner in San Francisco and would like to know of any top restaurants with American or Italian food, intimate but also hip. Not too trendy or young, but sophisticated. Any suggestions would be of great assistance. Not on a strict budget, just want great quality food in an ideal atmosphere, where we can talk to eachother without having to shout.

How many people. I would think Boulevard or Aqua would certainly work if it's not too large a party. Both have been around awhile, serve outstanding food, good atmosphere and are more subdued than many places.
