A freezer full of cookie dough
I'm at a loss.
I have a double recipe of russian tea cake dough, half a recipe of sugar cookie dough, and half a recipe of some chocolate cookie dough, plus both chocolate and vanilla frosting. I'm mainly stumped on the russian tea cake dough, since it's not terribly sweet and is so light with nuts in it. Oh, and I'm reeeeeeeally sick of cookies.
Ideas?

Katie cracks me up too! Too cute. Unfortunately, cookies are not my forte (they don't call me ice cream maven for nothin'). I don't even know what Russian tea cake dough is!
Oh, I did just have a thought about your chocolate and sugar cookie dough though...I think it would be cool to make checkerboard cookies. I've never made them before, but I envision rolling out some blockish "logs" of each and then assembling them so each layered end will look like a checkerboard. Chill and then slice down to create individual cookies. I don't know if this makes any sense, but it would look fun and also have both flavors. Let us know what you come up with!
Edited to add: Or you can roll out each dough flat. Lay one on top of other and roll up lengthwise. Chill and slice for swirl cookies.

I'm sorry, I'm pretty stumped! Because, if you're tired of cookies, then you are probably tired of sweets in general! When this happens to me, I just send them off to work with my husband!! For my best friend's Christmas present, I did do a whole batch of chocolate chip cookie dough balls and froze them, just like leeanneabe is suggesting.
Are the Russian Tea Cakes savory enough that you could make them into a cracker? Like, add shredded cheddar cheese, fresh thyme, more salt, and cracked black pepper to the dough and make a cracker out of it. Serve it with a apricot chutney or something? I don't know! I feel like I'm under pressure! :-)

I was going to suggest a fruit pizza -- I've seen it made with a sugar cookie base (basically, a large sugar cookie, baked), topped with cream cheese with sugar and a little lemon juice, with fresh fruit on top. I imagine the russian tea cake would work as well. Or the Russian tea cake for a modified linzer torte?

Are you looking for ideas for the cookie dough in general or ideas that will make you want to eat it?
I was thinking you could make a nice gift for someone with pre-formed balls of cookie dough (since you have a nice variety) along with the recipe. My friends like to buy the pre-packaged cookie doughs and it makes me cringe because it so easy to whip up a batch of dough and keep it in the freezer and the cookies will taste so much better.
Using the Russian tea cake as a pie crust is a good idea. My mom has recipes that use a crust similar to those cookies and she fills it with lemon pudding and whipped cream, or vanilla pudding with whipped cream folded in and layered with mandarin oranges, and also a chocolate cream pie filling.
Dryer's used to make an ice cream called Grandma's cookie jar that had vanilla ice cream, choc. chip cookie dough, peanut butter dough, and choc. cookie dough mixed in. It was my favorite.
Are your frostings buttercreams? Are you tired of cakes? I love a good cupcake with a dollop of frosting piled on it. I've also seen a recipe where you stick a ball of cookie dough in the middle of a cupcake, bake it all, then frost it. That would take care of both your "problems"!

Could you use the Russian Tea Cake dough to make a kind of shortbread crust for some kind of tart filled with pastry cream and topped with fresh fruit? I'm not real familiar with that dough.
As for the sugar cookie dough, you can roll it out thin and put it into mini muffin tins and bake it, then fill with lemon curd and top with a raspberry for a little change from cookies.
